Fresh yeast is a live product, giving off CO² and H²O during stocking and distribution. It needs packaging with a precisely tailored permeability to both gases and moisture vapour. A range of films have been manufactured by Innovia Films with permeability to moisture of 600g/m2/day, which has been shown to be the optimum permeability for keeping the yeast moist, without encouraging mould growth when combined with an inner Kraft paper wrap. The extremely high gas barrier of the of these films protects the activity of the yeast. The combination of the barrier properties maximizes the shelf life of the fresh yeast. |

Reasons for using cellophane in Yeast wrapping applications: 1. Moisture Control — Fresh Yeast gives off CO² and H²O. Our Yeast Wrapping Films have been engineered with optimum permeability to both gas and moisture. This optimum permeability keeps the yeast moist without encouraging mould growth. Moisture loss in yeast packed in Cellophane™ is nearly 50% less than in waxed paper.
2. Shelf Life Extension — The gas barrier of the Cellophane™ film protects the activity of the yeast. The combined barrier properties engineering into these films helps to optimise the amount of carbon dioxide (CO²) and water (H²O) produced within the pack. 3. Packaging Speed and Integrity — Cellophane™ runs well on high speed packing lines. It has a wide operating window for heat sealing, controlled slip and its lack of resistance to cutting means reduced knife wear. Low sealing temperature reduces the risk of burning the yeast at the packing stage.
4. Bacteria barrier - Cellophane™ provides a complete bacteriological barrier. Micro-perforated plastics or paper wrappers provide very limited protection from microbiological contamination. 5. Transport & Storage - It is possible to significantly reduce the storage temperature without detriment to the product. One company has been able to cut energy costs by reducing storage temperatures from -11˚C to -5˚C following the move to Cellophane™.
6. Strength - Cellophane is oil and chemical resistant and is not adversely effected by vegetable or mineral oils, lipids, gums and carrageenan, food starches, sodium solutions, animal or vegetable proteins.
7. Environmental impact - Cellulose is effectively non-toxic solids which present no environmental hazards. Yeast wrappers may be disposed of in compost sites, and will result in biodegradation in the presence of suitable micro-organisms and favourable conditions.
